Music has long been a passion of Theo's, commencing violin lessons at the age of 9 and progressing to mandolin in his teens. With two cousins he formed a trio that performed at many different types of functions, prior to moving away from Christchurch to pursue his corporate career in various locations around New Zealand.
After a successful career as Chief Executive of several national organisations, Theo pursued his dream of opening his own hospitality establishment, Theo's Greek Taverna, in Wellington, in 1997. This soon became known as Wellington's home of authentic Greek food, wine, music, dancing, atmosphere and fun... the total Greek experience.
An unforgettable part of the success of Theo's Greek Taverna was the musical entertainment provided by Theo's Trio, an ensemble featuring bouzouki, guitar and mandolin (played by Theo himself) and the Greek dancing. Guests loved to be "transported" to the Greek Islands for a few hours.

After selling his taverna in 2006, Theo moved to Auckland where he performed with VoxNova, a popular latin and gypsy quintet.
Greek Nights was formed in August 2008 after Theo's former musical colleagues David & Christina Daniela moved to Auckland. Both had played a wide range of Greek music in Wellington: David regularly appearing at Theo's Greek Taverna on guitar, while Christina had also performed with her Greek band To Fos ("the light") - which she co-founded with David.
